Evolution

01 — From pantry to practice

We began as a small recipe notebook: precise technique notes, annotated ingredient provenance and a handful of reliable menus for friends. As requests grew, we kept the editorial method — slow testing, documentation, and rigorous sourcing. Over five years the notebook became a monthly study, then a curated subscription. Today the approach remains identical: one deep offering each month, with clear technique, source transparency and a focus on lasting skill rather than fleeting hacks.

02 — Growth

Growth meant partnering with regional farmers and millers. We formalized sourcing notes and added tasting commentary so readers learn why an ingredient behaves a certain way in a recipe. That added layer of provenance turned recipes into a craft course.
